Shole Zard Recipe
Ingredients
- Rice : 2 cups
- Sugar : 1 cup
- Water : 3 cups
- Butter : 100 gr
- Saffron : 1 teaspoon
- Cardamom and rosewater : to enough quantities
- First wash the rice. Pour the saucepan with water and put on heat. Then pour rice and continually stir to soften.
- Then add butter, cardamom and saffron. When rice softens enough take it away from heat.
- Now add rosewater to make it odorant and let to cool.
- Then serve in bowl and decorate with cinnamon, almond, walnut and pistachio slices.
- To get best color, never add saffron directly, but brew it then add to Shole zard. Pay attention to add saffron before adding sugar.
- Otherwise rice grains aren’t colored uniform that is cause of sugar glair.
